Welcome to Cooking with Richo

Learn to cook with one of Australia's leading chefs, Adrian Richardson. This series focuses on helping you master cooking techniques like pan frying, grilling, braising and more… all in the comfort of your own kitchen! Chef Richo will begin with an episode to help you understand the theory behind each culinary method, then you can choose a practical episode to cook along to. Each cooking episode will have in its description a list of everything you’ll need to cook that dish. Then, when you’re ready you can jump into the kitchen, hit play and start cooking with Richo. He’ll guide you through cooking each dish, giving you his tips and tricks along the way and teaching you to learn to rely on your sense of smell, hearing, touch and taste to help you recognise when a dish is perfectly cooked. How to perfectly pan fry a chicken breast

You’ll need: 400g Chicken breast – skin on, 1tsp of salt, 1tsp of pepper, 4 Tbp of extra virgin olive oil, Pair of tongs, Fry pan – non stick or heavy cast iron. Optional: Digital thermometer. Chef Adrian ‘Richo’ Richardson is going to show you that cooking chicken shouldn’t be hard. By the end, you’ll know how to crisp the outside while keeping the inside juicy and tender. Just follow along and feel free to pause if you need to allow a little more cooking time.

How to pan fry a piece of fish to crispy perfection

You’ll need: A piece of salmon – 250g, 1 tsp salt, 1tsp pepper, 4 Tbs extra virgin olive oil, 2 Tbs butter (or however much you like), a pair of tongs, fry pan – non-stick or heavy cast iron. Optional: Digital thermometer Chef Adrian ‘Richo’ Richardson is going to show that perfecting pan frying of one fish allows you to pan fry all fish. Just follow along and feel free to pause if you need to allow a little more cooking time.

A special way to pan fry pot sticker dumplings

You’ll need: 12+ dumplings (store bought or home made) 4 Tbs extra virgin olive oil, 4 Tbs cornflour, ¼ cup water, a pair of tongs, small mixing spoon, non-stick fry pan.   Chef Adrian ‘Richo’ Richardson is going to show you how to impress your friends with his special way of pan frying dumplings, it’ll be like nothing you’ve cooked before. Just follow along and feel free to pause if you need to allow a little more cooking time.

Pan-fried gnocchi with peppers, olives and goats cheese

You’ll need: 500g gnocchi – store bought or home made, ¼ cup sliced sun dried tomatoes, ½ cup sliced roasted peppers, ¼ cup olives without pips, 1 cup of chopped herbs 4 Tbs extra virgin olive oil, 3 Tbs butter, 1 block of goats cheese, a pair of tongs, wooden spoon, non-stick fry pan. To blanch gnocchi bring a pot of salted water to a boil then reduce the heat to a simmer. Add equal parts ice and water to a bowl and set aside.  Blanch the gnocchi in the simmering water until they float to the top and then transfer to the iced water bowl.   Chef Adrian ‘Richo’ Richardson is going to show you a great way to cook your gnocchi to help bring out the flavour. You’ll never want your gnocchi cooked any other way again. Just follow along and feel free to pause if you need to allow a little more cooking time.
